My advice is to carry a shit load of cure disease potions. If you drink one after you've been infected, you're clear. You have three days from the time of infection before you become a vampire. You can also pray at any shrine in that three day window to cure any disease, like vampirism.

Fill the Black Soul Gem by casting Soul Trap on a humanoid target. Meet Falion at the stone circle to cure the infection.
